So I had one of those weeks where it seemed like every night I went to make dinner I didn’t have one of the ingredients that I needed. So literally, for four nights last week I was forced to completely rethink what we were eating and use my creativity to come up with something new to eat. I hate when that happens…I like plans and don’t like when my plans have to change. Oh well…hopefully this week goes better!
One new recipe I did try this week was the Thai Turkey Burgers. I am a fan of these! They were delicious and had so much flavor. The slaw you make with the burgers is really good but even without the slaw they are full of flavor! I definitely suggest trying these out sometime.
So here is what we are eating this week (hopefully)…
Sunday: Pancakes with Bacon and Strawberry Banana Smoothies (if you haven’t noticed we usually have brinner on Sunday nights)
Monday: Red Lentil Stew (I am trying to do meatless Mondays. This recipe was made on The Chew and I’m looking forward to trying it out.)
Tuesday: Thai Style Pork Stew (This is a really tasty crockpot meal!) with Rice and Roasted Brussel Sprouts
Wednesday: Philly Cheesesteak Stuffed Bell Peppers with Parmesan Pasta
Thursday: Honey Garlic Chicken with Rice and Roasted Broccoli
We tried the Philly Cheese Steak Peppers last week, they were yummy.
Oh good! I’m looking forward to trying them out!
We had the Honey Garlic Chicken last night…. great flavor! I only had the chicken in the crock pot for 2 hours and it was still a little over cooked (the recipe noted the cooking times were a little long). If I make it again, I’ll probably just make the sauce and bake the chicken. Live and learn!
